Ingredients for 2 people
- Pasta – 180 g
- Fresh spinach – 75 g
- Garlic – 3 cloves, finely chopped
- Lemon – 1 (juice and a little finely grated zest, to taste)
- Olive oil – 1 tbsp

- Lemons – 2 (juice and a little finely grated zest, to taste)
- Olive oil – 2 tbsp
- Butter – 2 tbsp
- Grated cheese – 60 g
- Salt and black pepper – to taste
Easy cooking method
1. Cook the pasta
Bring a large pot of salted water to a boil. Cook the pasta according to the packet instructions. Before draining, reserve about half a cup of the pasta water. It will help create a smooth, light sauce.
2. Gently sauté the garlic
Heat the olive oil and butter in a pan. Add the chopped garlic and cook gently until fragrant. Avoid letting the garlic turn too dark.
3. Add the spinach
Add the fresh spinach and stir for 1–2 minutes, until the leaves soften.
4. Bring everything together
Add the cooked pasta to the pan. Stir in the grated cheese, black pepper and a little lemon juice. Add reserved pasta water as needed and toss until everything is lightly coated. Taste and adjust the salt and lemon juice.
Serving suggestion
Serve hot, topped with a little extra grated cheese, finely grated lemon zest and freshly ground black pepper. Adding the lemon juice towards the end helps keep its flavour fresh and bright.
Chef’s tip: Add lemon juice gradually and taste as you go, so the tanginess stays balanced. Adjust the cheese to suit your preference.
A quick, colourful and satisfying dinner idea for busy evenings—easy to prepare for two or to share with the whole family.
